Healthy granola recipe

Home made granola is a tasty and healthy option for quick breakfasts

Regular breakfast cereals are a big no no for me! Most are highly processed, full of sugar, artificial flavorings, unhealthy fats, and other rubbish! This means they also fall short of providing our children with a good start to the day. But they are easy which is why I wanted to give you another easy breakfast option.

This is one of my flexi recipes which basically means I use whatever I have in my cupboard! The nuts & seeds provide a good protein source and powerful nutrients like omega 3, magnesium, zinc, vitamins and antioxidants. They’re also a great source of fibre.

You can make it gluten free or with oats. Oats don’t actually contain gluten but they’re usually contaminated with gluten during processing in factories. You could also omit both oats and quinoa flakes if making a grain free version, I’d just add more coconut, nuts & seeds.

So here’s my recipe but feel free to experiment to find the flavours you like.

Ingredients:

  • 1 cup oats (or quinoa flakes for a gluten free option)
  • 1 cup coconut flakes
  • 1 cup chopped up nuts of choice (I like almonds, hazelnuts or pecans)
  • ½ cup pepitas (pumpkin seeds)
  • ½ cup flax seeds (linseeds)
  • ½ cup sunflower seeds
  • ¼ cup olive or coconut oil
  • ¼ cup maple syrup or honey
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla powder
  • ½ teaspoon salt

Method:

  1. preheat oven to 160’c
  2. mix all ingredients (except coconut flakes) in a big bowel
  3. spread out onto a baking sheet lined with baking paper/parchment
  4. bake for 10-15 minutes (until golden)
  5. add coconut flakes & bake for a further 5 mintues
  6. leave on tray to cool
  7. store in airtight container

Will stay crunchy for around 14 days but if it gets soggy just pop it into the oven (160’c) for a few minutes and let it cool before serving.

My girls love it with milk or yoghurt but also eat it on its own as a snack. My favourite is sprinkled over papaya and greek yoghurt 🙂
